Okay, so I’ve been messing around with gluten and dairy-free baking, and let me tell you, it’s been a journey. I started this whole thing because, well, my stomach was not my friend. Figured I’d try cutting out gluten and dairy to see if it helped, and spoiler alert: it kinda did!

First off, I had to find some recipes. I’m no chef, so I needed something simple. I’m more into the eating part than the cooking part, you know? I found this free online course thing that went over some basics, which was pretty helpful. It gave me a good starting point on techniques, I guess, since I am a total noob.

Then, I tried making this flatbread thing called “Socca.” Apparently, it’s some kind of street food from France. Sounded fancy, but it was actually super easy. Just chickpea flour, water, and some spices. I grilled it up, and honestly, it wasn’t half bad! It had a nice, nutty flavor. I ate that with some hummus I had made earlier.

My Cauliflower Pizza

  • Next up, I got brave and attempted a cauliflower pizza crust. I know, I know, it sounds weird. But trust me, it’s not as bad as you think. Basically, you just grind up some cauliflower, cook it, mix it with some cheese (dairy-free, of course), and some herbs.
  • Then you press it out into a pizza shape and bake it. It actually held together pretty well, which I was surprised about. I topped it with some tomato sauce, veggies, and some more of that dairy-free cheese. It wasn’t exactly like regular pizza, but it was pretty darn tasty. It was a little bit of work to make, but I like it.

Peanut Butter Cookies

  • Then, for a sweet treat, I made these peanut butter kiss cookies. These were probably the easiest of the bunch. Just peanut butter, some sugar substitute, an egg replacer, and some chocolate in the middle. I was kind of making these up as I went, but they turned out okay.
  • They were a little crumbly, but hey, they were gluten and dairy-free, so I’m not complaining. I may or may not have eaten half the batch in one sitting. Don’t judge me. I really liked these ones.

So, that’s my gluten and dairy-free baking adventure so far. It’s been a lot of trial and error, but I’m starting to get the hang of it. It’s definitely not the same as regular baking, but it’s been fun to try new things. Plus, my stomach’s been a lot happier, so that’s a win! I’m no expert, but if you’re thinking about trying gluten and dairy-free baking, I’d say go for it. Just be prepared for a few flops along the way. It’s all part of the fun, right?
