I browned some ground beef in a pan, added some chopped onions and peppers. Then I threw in a can of diced tomatoes and some Italian herbs. While that was simmering, I greased a baking dish. I layered some of the meat sauce on the bottom, then topped it with a bunch of mozzarella cheese. I repeated the layers a couple of times, ending with cheese on top. Into the oven it went, and about 20 minutes later, I had this bubbly, cheesy, pizza-like casserole. It totally hit the spot!
Other Go-To Options
Some other nights when I am lazy, I just throw some chicken or steak on the grill. Super easy, and you can’t go wrong with that. I also really like shrimp, but you gotta watch the portion size because it does have a few carbs. For veggies, I stick to the basics like broccoli, cauliflower, green beans, and zucchini. They’re all pretty low in carbs and cook up quickly.
