First things first, I had this idea of making everything bright and fun. I started by hitting up the grocery store. Grabbed a bunch of colourful veggies: bell peppers (red, yellow, orange – the whole rainbow!), carrots, cucumbers, cherry tomatoes… you get the idea. Also snagged some fruits like strawberries, blueberries, and grapes.

Then came the fun part: chopping! I diced the bell peppers and carrots into small, bite-sized pieces. The cucumbers I sliced into rounds. The cherry tomatoes? Just halved ’em. This took a little while, but I put on some music and just got into the zone.

Next, I wanted something a bit more substantial. So, I decided to make mini skewers. I used those wooden skewers you can find at any supermarket. I threaded the chopped veggies and fruits onto the skewers in a rainbow order. Red tomato, then orange pepper, yellow pepper, green cucumber, blueberries, and a grape at the end. They looked SO cute!

For a dip, I whipped up a super simple hummus. Just threw some chickpeas, tahini, lemon juice, garlic, and olive oil into a food processor and blended until smooth. A little salt and pepper to taste, and boom! Done. I put the hummus in a bowl and drizzled a bit of olive oil on top with a sprinkle of paprika for extra colour.

And for a sweet treat? I made fruit salad skewers! Basically, the same idea as the veggie ones, but with fruits. Strawberries, blueberries, grapes, and I even added some chunks of melon. These were a HUGE hit.

To present everything, I arranged the veggie skewers and fruit skewers on a big platter around the bowl of hummus. I also added some colourful tortilla chips for extra dipping. It looked so festive and inviting!

Honestly, the whole thing was pretty easy and didn’t take too long. The prep was the most time-consuming part, but even that wasn’t too bad. And the best part? Everyone loved it! It was a great way to get people to eat their veggies (and fruits!) without even realizing it.
