Okay, so today I wanted to whip up something super quick and easy for lunch. I’m trying to eat more veggies, so I decided to go for vegetarian recipes. Here’s how it went down.
First, I rummaged through my fridge and pantry to see what ingredients I had on hand. I found some leftover cooked quinoa, a can of chickpeas, some cherry tomatoes, half an avocado, and a sad-looking cucumber. Not bad!
Then, I started chopping. I diced the cucumber and halved the cherry tomatoes. The avocado was perfectly ripe, so I just scooped it out and sliced it up.
My First Try: Quinoa Salad
- I threw the quinoa in a bowl.
- Added the chickpeas, cucumber, and tomatoes.
- Drizzled some olive oil and squeezed some lemon juice over it.
- Sprinkled some salt and pepper.
- Mixed everything together.
It looked pretty good, but it was a bit bland. I think it needed more flavor.
My Second Try: Chickpea Avocado Sandwich
- I mashed together the chickpeas with some spices, and mayo.
- Spreaded a piece of toast with that mash.
- Layered some avocado slices, some lettuce, and tomato slices on top.
- Added some salt and pepper to it.
- Topped it with another slice of bread.
This one was much better! The sandwich was really filling and tasty. I will make it again later.
So, yeah, that was my little vegetarian lunch adventure. It was fun experimenting and I found one recipe that I really like. It’s amazing what you can make with just a few simple ingredients!
