Alright, folks, let’s talk about chicken. Specifically, baked chicken, because who doesn’t love a good, easy baked chicken? I mean, I sure do. It’s like the ultimate comfort food, and it’s way easier than you might think. So the other day I got this craving for some juicy, flavorful chicken, and I decided to do something about it.
First, I went and got myself some chicken. I’m a thigh guy myself, but you do you. Breasts, drumsticks, whatever floats your boat. Then I started messing around in the kitchen, you know, just throwing stuff together like I usually do. I grabbed some mayo, because, let’s be honest, mayo makes everything better. It keeps the chicken moist, you see. And I was thinking, “What else can I throw in there?”

- Mayonnaise
- Parmesan cheese
- Some seasonings
I raided my spice cabinet. Garlic powder, onion powder, paprika, a little salt and pepper – the usual suspects. Oh, and I found some Parmesan cheese in the fridge, and I thought, “Why the heck not?” I love cheese, and cheese and chicken are a match made in heaven, right? So, I mixed all that stuff with the mayo in a bowl. It looked kind of weird, but trust me, it smelled amazing.
Then came the fun part. I took those chicken pieces and just slathered them in that mayo mixture. I made sure every inch was covered because, like I said, more is better. I put them in a baking dish, sprinkled a little extra Parmesan on top for good measure, and popped them in the oven.
I set the oven to, like, 375 degrees, I think? I’m not one for exact measurements. And I just let them bake. The smell that started coming out of that oven was heavenly. My mouth was watering, my stomach was rumbling, and I kept peeking in the oven like a kid on Christmas morning. You just know it’s going to be good when it smells that good.
The result?
After about 40 minutes, I pulled them out. Golden brown, crispy on the outside, juicy on the inside… perfection. I’m not even kidding, it was some of the best darn chicken I’ve ever had. And so easy! I served it with some roasted veggies, but you could do rice, mashed potatoes, whatever you like. It’s just that simple. A little bit of this, a little bit of that, and boom – deliciousness. Seriously, give it a try. You won’t regret it.
