Okay, so yesterday I saw this title floating around, “easy and quick breakfast recipes by sanjeev kapoor,” and I thought, “Hey, I’m always rushing in the morning, let’s give it a shot!”

First up: the Besan Chilla. I remembered vaguely what it was, chickpea flour pancake, right? I dug around in the pantry, found some besan (chickpea flour), and started following the recipe I found online. Basically, you mix the besan with water, some chopped onions, green chilies (I went easy on these, didn’t want to burn my tongue at 7 AM), coriander, and a few spices like turmeric and chili powder.

I whisked it all together. It was a bit lumpy at first, so I added a little more water to get the batter consistency right. Then, I heated up a non-stick pan. I greased it lightly with some oil. Poured a ladleful of batter onto the pan, spread it out into a thin circle.

Cooked it for a couple of minutes on each side, until it turned golden brown. Honestly, the first one was a bit of a disaster – stuck to the pan a bit, tore a little when I flipped it. But hey, practice makes perfect! The next few were much better. I served it with a dollop of yogurt and some pickle. It was surprisingly good! Quick, easy, and filling. Cleaned up the pan and plate.

Next, I tried the Vegetable Upma. I actually had some leftover cooked vegetables in the fridge (carrots, peas, beans), so this was even faster. I heated some oil in a pan, added mustard seeds. Waited for them to splutter. Then I threw in some chopped onions, ginger, and green chilies. Fried them until they were translucent.

Added the leftover vegetables and some chopped tomatoes. Sautéed everything for a few minutes. Then, I added some roasted semolina (rava) and mixed it well. Poured in some hot water, covered the pan, and let it simmer until the semolina was cooked and the water was absorbed.

The upma was ready in like, 10 minutes! I squeezed some lemon juice on top and garnished it with coriander. This was also pretty tasty, and a good way to use up leftover veggies. A little dry for my liking, so next time I’ll add a bit more water. Again, cleaned up after myself.

Finally, I wanted something sweet, so I went for the Suji Halwa. This one is a classic. I heated some ghee in a pan, added semolina (suji), and roasted it on low heat until it turned golden brown and fragrant. This step is important – you don’t want to burn the semolina.

Then, I added hot water and sugar. Stirred continuously to prevent lumps from forming. Cooked until the water was absorbed and the halwa thickened. I added a pinch of cardamom powder and some chopped nuts for extra flavor and crunch.

The halwa was delicious! Warm, sweet, and comforting. Perfect for a quick sweet treat. I’ll definitely be making this again. Scraped the pan clean and felt good about the effort.

Overall, the breakfast recipes were a success! They were all relatively easy to make and didn’t take too much time. Plus, they were all much healthier than my usual sugary cereal or toast. I’ll definitely be incorporating these into my morning routine.
