Alright, so last night I was craving something quick and easy. You know, one of those nights where you just can’t be bothered to cook a whole meal. So, I decided to whip up some super simple snacks. Here’s what I did:

Garlic Butter Toast
First off, garlic butter toast. Seriously, who doesn’t love garlic butter toast? I grabbed a loaf of Italian bread – the kind you can slice yourself. I think I bought it like three days ago. Anyway, I sliced off a few pieces, maybe about half an inch thick.
Then, I softened some butter – just stuck it in the microwave for like 10 seconds. I minced a couple of cloves of garlic – I actually use a garlic press, much easier. Mixed the garlic into the softened butter, added a pinch of salt and pepper, and boom! Garlic butter.
I spread that garlicky goodness all over the bread slices and popped them into the toaster oven. I kept an eye on them until they were golden brown and crispy – took maybe 5 minutes? They came out perfect. I ate them while they were still warm. So good!
Quick Quesadillas
Next up, quick quesadillas. These are a lifesaver when you’re really hungry but also super lazy. I took two flour tortillas – the big kind. I sprinkled some shredded cheddar cheese on one tortilla, then added a layer of black beans – I just used the canned ones, rinsed and drained. I think I had some leftover salsa in the fridge, so I threw a spoonful of that on top of the beans.
Then, I sprinkled some more cheese on top and slapped the other tortilla on. I heated a non-stick pan over medium heat. I put the quesadilla in the pan and cooked it for like 3-4 minutes per side, until the cheese was melted and the tortilla was golden brown. I used a spatula to flip it carefully.

Once it was done, I took it out of the pan and cut it into wedges. Dipped it in some sour cream – or Greek yogurt, if you’re feeling healthy. Delicious!
Simple Fruit & Nut Mix
And finally, for something a little healthier, I threw together a simple fruit and nut mix. I had some almonds, walnuts, and dried cranberries in the pantry. I just tossed them all in a bowl – no real measurements, just eyeballed it. I also added a few chocolate chips – you know, for good measure.
I grabbed a handful of that while I was watching TV. Quick, easy, and at least slightly nutritious. Perfect for those late-night cravings.
