Okay, so I had a bunch of zucchini from my garden, and I was like, what am I gonna do with all this? I needed some quick and easy recipes because, you know, life’s busy. So I started hunting around for ideas.
First thing I tried was zucchini fries. I figured, why not, right? I found this one idea online. It said to mix some bread crumbs with basil, salt, garlic powder, oregano, and Parmesan cheese in a bowl. Then, in another bowl, I put some eggs. I sliced up the zucchini into fry shapes. Dipped them in the egg and then coated them in the bread crumb mix. I baked them in the oven, and they turned out pretty crispy. Not bad at all!
Then I got a little more adventurous. I thought, let’s try something with chicken. I stumbled upon this idea for a Mediterranean Chicken Zucchini Bake. I chopped up some chicken breasts, and sliced the zucchini. I found a Mediterranean seasoning mix at the grocery store so I tossed the chicken and zucchini in that and baked it all together in a dish. It smelled amazing while it was cooking, and it was a pretty healthy and tasty meal.
Zucchini Lasagna
- Layering: Then I found this thing online called zucchini lasagna. Sounded interesting, right? Basically, you use thin slices of zucchini instead of pasta noodles. I made my regular lasagna meat sauce, layered it with the zucchini, some ricotta cheese, and mozzarella.
- Baking: Baked it until it was all bubbly and the zucchini was tender.
- Result: It was a good way to use up a lot of zucchini, and it was a lower-carb version of lasagna, which I guess is a plus.
I also tried making this thing called Zucchini-Wrapped Chicken Enchiladas. I found the idea online. I took some chicken and cooked it with some spices, then wrapped it in zucchini slices that I had to first bake for a little bit. Then, I put some enchilada sauce and cheese on top and baked it again. It was a bit more work, but it was pretty good!
Honestly, I was surprised by how many things you can do with zucchini. It’s pretty versatile. I even tried eating it raw in salads. It’s not my favorite that way, but it’s not terrible. Zucchini is definitely a good veggie to have around, especially when you have a garden that’s overflowing with them!
