Alright guys, so today I’m sharing some super simple meat recipes that even I, a cooking-challenged individual, managed to pull off. Let’s dive right into my culinary adventures (and near-disasters!).

First Up: Speedy Sausage Skillet
Okay, so I started with the basics. I grabbed some Italian sausages from the fridge – the spicy kind, because I like a kick. Then I chopped up half an onion (crying involved, naturally) and a bell pepper – red one, looked pretty. I fired up the stove, threw some olive oil in a skillet, and waited till it shimmered.
Next, I browned the sausages. I mean, I tried to brown them. Some parts got a little…charred. Hey, it happens! Once they looked mostly cooked, I tossed in the onions and peppers. Cooked them until they were soft-ish. Then I poured in a can of diced tomatoes, added a sprinkle of Italian seasoning (because why not?), and let it all simmer for like, 15 minutes. Served it over rice. Boom. Dinner.
Then: Lazy Lemon Chicken
This one’s even easier, I swear. I took some boneless, skinless chicken breasts (the pre-cut kind, I’m not messing with knives more than I have to), laid them in a baking dish, and poured a bottle of lemon-herb marinade over them. I actually used one of those packet marinades from the store to make it even easier. I covered the dish with foil and popped it in the oven at 375°F (about 190°C) for like, 30 minutes. Then I removed the foil and let it bake another 10 minutes, just to get a little color on top.
Important note: Make sure the chicken is cooked all the way through! I stuck a meat thermometer in it just to be sure. Served with some steamed broccoli. Healthy-ish and delicious!
Lastly: Ground Beef and Broccoli Bowl
This is more of a cheat meal. I grabbed a pound of ground beef and browned it in a pan. I drained off the fat. While the beef was browning, I chopped up some broccoli florets. Once the beef was cooked, I added the broccoli to the pan. I mixed a sauce of soy sauce, brown sugar, ginger(powder), garlic(powder), and a little cornstarch. I poured the sauce over the beef and broccoli, and cooked until the broccoli was tender-crisp and the sauce thickened. Served it over rice. Quick, easy, and satisfying. I’m a sucker for rice bowls.

- Tip: You can add a pinch of red pepper flakes for some heat if you like!
- Another tip: Don’t overcook the broccoli! Soggy broccoli is the worst.
