Okay, so the other day, I was staring into my fridge, totally blanking on what to make for dinner. It was just me and my partner, and we were both kinda tired. I wanted something quick, easy, and, you know, actually tasty. Here’s what I did.

The “I Need Food Now” Game Plan
First, I did a quick inventory. I grabbed some chicken breasts, a bag of pre-washed spinach, and some cherry tomatoes. I know I need some simple pantry.
Quick Prep
I grabbed a mixing bowl,put the chicken in, and then it’s seasoning time! I’m a simple flavor * salt,pepper,garlic powder are enough for me.
After I finished the seasoning,I put some olive oil in the pan, medium heat, and tossed the chicken in. I like to let them cook about 6-7 minutes per side, until they’re cooked through and getting a little golden.
Adding the goods
While the chicken was doing its thing, I halved the cherry tomatoes. Once the chicken was cooked, I took it out of the pan and set it aside. I add a little more olive oil to the pan and drop in the spinach and tomatoes, and added a pinch of salt.
I only let the spinach wilt down for like a minute – I don’t like it mushy. Then, I sliced up the chicken and tossed it back into the pan with the spinach and tomatoes.

The Finished
I thought I need some carbs,so I made some quick couscous and put them on the plates,then added the chicken and veggies on top.
Honestly, the whole thing took maybe 20 minutes, tops. And it was actually good! The chicken was juicy, the spinach was still a little crisp, and the tomatoes added a nice sweetness.
