Alright, so, lunch at home, right? I’ve been working from home a lot lately, and let me tell you, figuring out what to eat for lunch every day can be a real pain. But I’ve gotten pretty good at whipping up some quick and tasty stuff, so I figured I’d share my routine.
First off, I hit the fridge. See what’s in there, you know? Leftovers are a lifesaver, seriously. If there’s some leftover chicken or pasta or something, boom, that’s lunch. Easy peasy.
But, if the fridge is looking a little sad, I move on to my go-to quick meals. One thing I really like is a quick salad. I always keep some salad stuff, like a bag of mixed greens, some cherry tomatoes, maybe a cucumber, around. Chop, chop, chop, toss it all together. Then I’ll add some protein, some canned tuna, or even just some nuts or seeds. A simple vinaigrette, which I just whisk together in a little jar—olive oil, vinegar, salt, pepper—and done.

Another thing I’ve been doing a lot is soup and sandwiches.

- Cheese, deli meat, or whatever sandwich fillings you have
I’ll heat up a can of soup—nothing fancy, just your basic tomato or chicken noodle. While that’s heating, I’ll throw together a sandwich. Whatever bread I have, some cheese, maybe some deli meat if I’ve got it. Grill it up if you want a hot sandwich, you know, make it all melty and delicious.
But wait! Recently, I have a new discovery! I found canned salmon is a treasure.
- Salmon-Stuffed Avocados:
- Canned salmon
- Avocados
- Maybe some seasonings or hot sauce if you’re feeling fancy
How to make it?
Just mash up the avocado, mix it with the salmon straight from the can, and stuff it back into the avocado skins. It’s surprisingly good and super filling.
So yeah, that’s my lunch routine. Nothing too complicated, but it gets the job done.
