Alright, so today I’m sharing my go-to quick and easy lunch ideas. I’m no chef, just a regular person who needs to eat something decent without spending hours in the kitchen.

Quick & Easy Food to Make for Lunch at Work

First Up: The Almighty Avocado Toast

Okay, so I usually start by grabbing a slice of bread. Whole wheat, sourdough, whatever I’ve got lying around. I pop it in the toaster until it’s golden brown and crispy. While that’s toasting, I grab an avocado, slice it in half, remove the pit (carefully!), and scoop out the flesh into a bowl. I mash it up with a fork, add a squeeze of lemon juice, a sprinkle of salt and pepper, and sometimes a little red pepper flake if I’m feeling fancy. Once the toast is ready, I spread the avocado mixture on top. Boom! Done. Sometimes I’ll add a fried egg on top for extra protein if I have time. Easy peasy.

Next: The Speedy Salad

Salads don’t have to be boring. I start with a base of mixed greens. Then I raid the fridge for whatever veggies I can find – cucumbers, tomatoes, bell peppers, carrots – and chop them up. I also add some protein, usually leftover grilled chicken or canned tuna. For dressing, I usually just whisk together some olive oil, balsamic vinegar, Dijon mustard, salt, and pepper. I toss everything together and voila! A healthy and filling lunch in minutes.

Then: The Wrap Star

Wraps are super versatile. I grab a tortilla (whole wheat or spinach, usually), and spread a layer of hummus or cream cheese on it. Then I add some sliced turkey or ham, some lettuce, tomato, and maybe some cheese. I roll it up tight and slice it in half. Super easy to customize and portable too!

Last But Not Least: Quesadilla Chaos

Okay, so I grab a tortilla. I sprinkle some shredded cheese on one half. Then I add some leftover cooked chicken or beans, maybe some salsa. I fold the tortilla in half and cook it in a dry skillet over medium heat until the cheese is melted and the tortilla is golden brown. I flip it halfway through. Then I slice it into wedges and devour. Quick, easy, and satisfying!
