Okay, so tonight, I was feeling super lazy but also kinda hungry. I didn’t want to order takeout again, so I decided to whip up something quick and easy. I’m calling it my “Quick Easy Dinner for One,” and honestly, it turned out pretty great!

The Game Plan

First, I scavenged through my fridge. I had some leftover cooked chicken breast (score!), about half a bell pepper, and a sad-looking zucchini. My pantry yielded a can of diced tomatoes and some pasta. Perfect! This was shaping up to be a one-pan pasta situation.

The Cooking Process

  • First I took a pan.
  • I chopped up the bell pepper and zucchini into bite-sized pieces.
  • Then, I diced the leftover chicken.
  • Next, I heated up some olive oil in a pan over medium heat.
  • Once the oil was hot, I tossed in the veggies and sautéed them for a few minutes until they started to soften.
  • After that, I added the chicken and stirred everything together.
  • I poured in the can of diced tomatoes (juice and all!) and let it simmer for a bit.
  • I added some salt, pepper, and a pinch of Italian seasoning – nothing fancy, just what I had on hand.
  • Finally, Add those pasta in the pan.
  • I stirred everything, brought it to a gentle boil, then reduced the heat to low, covered the pan.

I let it all simmer for about 15-20 minutes, stirring occasionally, until the pasta was cooked through and the sauce had thickened up a bit. You might need to add a splash of water if it gets too dry.

The Result

Honestly, it was delicious! The veggies were tender, the chicken was flavorful, and the sauce was simple but satisfying. It was exactly what I needed – a quick, easy, and relatively healthy dinner for one. And the best part? Minimal cleanup! I sprinkled some grated Parmesan cheese on top.
