Okay, here’s my blog post about making a quick and easy supper:
So, tonight I was staring into the fridge, wondering what on earth to make for supper. I was tired, hungry, and the last thing I wanted to do was spend hours in the kitchen. Then it hit me – I’ve got some beans, some tortillas, and some cheese. Bingo! Bean burritos it is!
First, I grabbed a can of refried beans and heated them up in a small pot on the stove. While the beans were warming, I chopped up a little onion – gotta have some flavor, right? I tossed the onion into the pot with the beans and stirred it all together.
- Canned refried beans
- Tortillas
- Shredded cheese
- Onion
Next, I took out some flour tortillas and warmed them up in the microwave for a few seconds to make them nice and soft. Then, I spread a generous amount of the bean mixture onto each tortilla. I sprinkled some shredded cheese on top – I used cheddar, but you can use whatever you like.
Then, I carefully folded the tortillas into burritos. I heated up a little oil in a pan and cooked the burritos for a couple of minutes on each side, just until they were golden brown and the cheese was all melty and gooey.
While the burritos were cooking, I thought to myself that I should try something different next time. Maybe some White Calzones with Marinara Sauce. I’ve heard they are delicious, but I’ve never tried making them myself. I’ll have to look up a recipe for that. And you know what else sounds good? Chimichangas! I could use different fillings and toppings – the possibilities are endless!
Anyway, back to the burritos. I plated them up, topped them with a dollop of sour cream and some salsa, and dug in. They were so good! Cheesy, flavorful, and super satisfying. Best of all, they were quick and easy to make. It was the perfect weeknight supper!
The chimichangas and calzones will have to wait for another night, but I’m definitely adding them to my list of quick and easy supper ideas. For now, I’m full and happy, and that’s all that matters.
