Okay, so, the other day I was totally craving something quick and easy, but I didn’t want to eat meat. I stared at my fridge for a good five minutes, trying to figure out what to make. I noticed some spinach and a jar of artichoke hearts. Then it hit me – spinach artichoke dip pasta! I remembered seeing something about it online the other day, and I love that dip, so why not turn it into a meal, right?

Quick and Easy Meatless Dinner Recipes: Simple Meatless Meals for Beginner Cooks

First, I cooked some pasta. While that was going, I chopped up the spinach and artichoke hearts. Then, I just kind of threw them into a pan with some cream cheese, garlic, and a little milk to make it saucy. I mixed the cooked pasta, let it all heat through, added a sprinkle of parmesan cheese, and bam! Dinner was served. It was seriously so good and took maybe 20 minutes from start to finish.

Veggie Samosas

  • Chopped and prepared some vegetables to make the stuffing.
  • Made dough for the outer covering.
  • Filled and wrapped the stuffing.
  • Cooked them.
  • Then, I just fried them up and serve them with some chutney.

And you know what’s funny? I was thinking, this is so easy, maybe I should try more meatless stuff. I even started looking at some recipes for roasted veggie burritos, that’s the next thing I am going to try. I guess I could just roast a bunch of veggies and chickpeas, then put them in tortillas with some salsa and maybe some rice. It sounds pretty simple, too.

I used to think that cooking without meat was super hard, but it’s really not. Like, I had this guest over once, and I made them oatmeal with almond milk and fruit for breakfast. And for lunch, I just made these big salads with beans and nuts and stuff. They seemed pretty happy with it. I also served them some veggie samosas with papadum and chutney. They really liked it. We also had some rice and naan with a vegetarian curry for dinner. For dessert, I served gulab jamun and kheer.

Anyway, I’m starting to realize there are tons of easy meat-free meals out there. I saw a list of like, 35 of them! It had everything from soups to pasta to stir-fries. I might actually try to cook more of these in January 2025. It’s a good way to eat healthier, you know? I’ll keep you guys posted on how it goes!
