Okay, so yesterday I was craving something sweet, but I also didn’t want to spend hours in the kitchen or, you know, actually bake anything complicated. So I started digging around for some super simple dessert recipes I could whip up.

My Super Easy Dessert Experiment

First, I checked my pantry. I had some graham crackers, a can of sweetened condensed milk, and some chocolate chips – score! I immediately thought, “mini no-bake cheesecakes!” I’ve made these before, but usually with a pre-made crust. This time, I decided to go full DIY.

  • I crushed the graham crackers into crumbs. Used a rolling pin, which was oddly satisfying.
  • Then, I mixed the crumbs with some melted butter. Honestly, I just eyeballed the amount. Enough to make it all stick together, you know?
  • I pressed this mixture into the bottom of some cupcake liners. I used a spoon for this to make sure it compact.

For the filling, I simply whisked together the sweetened condensed milk with some cream cheese (that I luckily had softened beforehand) and a splash of vanilla extract. Again, no measuring, just went by taste. Once it was all smooth, I folded in some of those chocolate chips.

I spooned the filling on top of the graham cracker crusts and popped them into the fridge. The hardest part? Waiting! I gave them about two hours to chill, but honestly, even 30 minutes would probably be fine if you’re impatient like me.

The result? Seriously delicious little cheesecakes! They were creamy, chocolatey, and had that perfect graham cracker crunch. Plus, they took me maybe 20 minutes of actual work. Definitely a win for a quick and easy homemade dessert!
