Okay, so, I wanted to make some cupcakes today. Not from a box mix, you know, like actually make them from scratch. It seemed like a fun little project, and I figured, how hard could it be, right? So I looked up this recipe that was supposed to be “quick and easy”. Well, let me tell you…
First, I preheated the oven to 350 degrees. That part was easy enough. Then I grabbed a couple of muffin tins and lined them with those cute little cupcake wrappers. Feeling pretty good at this point, I got out a big bowl and my electric mixer. This is where things started to get a bit messy.
I measured out all the dry ingredients like flour, sugar, baking powder, and a pinch of salt and dumped them into the bowl. Then I added the wet stuff – some softened butter, a couple of eggs, milk, and a splash of vanilla extract. The recipe said to mix it all on low speed until it was just combined, and then crank it up to medium and beat it for a couple more minutes.
Well, I might have gotten a little carried away with the mixing because the batter went everywhere! It splattered all over the counter, on my shirt, even a little bit in my hair. Note to self: next time, use a bigger bowl or mix more slowly. Anyway, I finally got the batter to a somewhat smooth consistency, although I’m pretty sure there were still a few lumps in there.
Next, I carefully spooned the batter into the prepared cupcake liners. The recipe said to fill them about two-thirds full. I tried my best to be neat about it, but I definitely made a mess of that too. Batter ended up on the sides of the liners, on the muffin tin, you name it. I popped them into the oven.
While the cupcakes were baking, I got started on the frosting. I just made a simple vanilla buttercream because that’s my favorite. More mixing, more mess, but at least this time it was contained in the bowl. And let me tell you, that frosting tasted amazing. I may have “tested” it a few too many times with a spoon.
Finally, the cupcakes were done! I took them out of the oven and let them cool completely on a wire rack. Once they were cool, it was time for the best part – frosting! I used a piping bag to make some pretty swirls on top of each cupcake. They looked so good, I almost didn’t want to eat them. Almost.
I have to say, even though it was a bit of a messy adventure, the cupcakes turned out pretty delicious! They were moist and fluffy, and the frosting was the perfect amount of sweetness. Would I make them again? Maybe. But next time, I’ll definitely be more prepared for the mess.
