Hey everyone, I wanted to share my little kitchen adventure from today. I made a quick and easy cucumber salad, and let me tell you, it turned out pretty awesome! I’ve been trying to eat healthier lately, and this one is definitely a keeper.
First things first, I grabbed a couple of fresh cucumbers from my fridge. I washed them real good and sliced them up – not too thin, not too thick, just right. I like to leave the skin on cause it has more nutrients, you know?
Getting Started

Then, I thought, “Hmm, what else can I throw in here?” I had some red onions lying around, so I chopped one up and tossed it in with the cucumbers. And for a bit of sweetness, I found a pineapple in my pantry. Cut that baby up into small chunks and added it to the mix.

Now for the dressing, I wanted something simple, I mixed some olive oil, a squeeze of lemon juice, a pinch of salt, and a dash of black pepper in a small bowl. Whisked it all together until it looked kinda creamy. Poured that dressing over the cucumber, onion, and pineapple mix. Gave everything a good toss to make sure it was all nicely coated.

I let it sit in the fridge for about, like, 10 minutes? Just enough time for the flavors to get to know each other, you know? And that’s it! I had myself a super refreshing and tasty cucumber salad. It’s perfect for a quick lunch or a side dish for a picnic. Seriously, it took me less than 10 minutes to whip up this whole thing. Plus, it’s super hydrating and packed with good stuff – vitamins, antioxidants, you name it.
