Okay, so the family’s been complaining about the same old dinners. I get it, I fall into food ruts too. So, I decided to tackle that this week with some new chicken recipes. I wanted something quick and easy, because, let’s be real, who has hours to spend in the kitchen after work?

Operation: Find Simple Chicken Recipes
First, I hit up my favorite recipe sites and, of course, Pinterest. I typed in things like “easy chicken recipes,” “30-minute chicken dinners,” and “family-friendly chicken.” I was immediately bombarded with options. It was a little overwhelming, to be honest.
I started scrolling and saved anything that looked remotely interesting. I was ruthless, though. If a recipe had a mile-long ingredient list, I skipped it. If it required some weird cooking technique, I passed. I needed stuff I could realistically pull off on a weeknight.
The Chosen Few (Recipes, That Is)
After a good 20 minutes of searching, I narrowed it down to three recipes that seemed promising:
- One-Pan Lemon Herb Roasted Chicken and Veggies: This sounded perfect. Toss everything on one pan, throw it in the oven, and done. Minimal cleanup!
- Honey Garlic Glazed Chicken Thighs: My kids love anything with honey garlic, so this was a no-brainer. Plus, chicken thighs are usually pretty forgiving.
- Creamy Tomato and Spinach Chicken Skillet: This one was a little more involved, but still seemed manageable. And it had spinach, so I could pretend it was healthy.
Grocery Shopping Time
Next, I made a grocery list. I already had some basics like olive oil, salt, pepper, and garlic. But I needed to grab the chicken, veggies, lemons, honey, and a few other things. I always check my pantry and fridge first to avoid buying duplicates. No one needs three bottles of Dijon mustard, trust me.
The Cooking Commences!
Night 1: One-Pan Lemon Herb Roasted Chicken. I prepped the veggies (chopped potatoes, carrots, and broccoli), tossed them with olive oil, herbs, salt, and pepper. Then I rubbed the chicken with the same mixture, plus some lemon zest. Everything went on a big baking sheet and into the oven. It smelled amazing while it cooked, and it was super easy to clean up afterward. Success!

Night 2: Honey Garlic Glazed Chicken Thighs. I whisked together the honey garlic sauce (honey, soy sauce, garlic, ginger – I used the pre-minced stuff, don’t judge). I seared the chicken thighs in a skillet, then poured the sauce over them and let it simmer until the chicken was cooked through and the sauce was nice and thick. Served it with rice and steamed green beans. The kids devoured it.
Night 3: Creamy Tomato and Spinach Chicken Skillet. Okay, this one was a little more effort. I had to cook the chicken, then make the sauce (diced tomatoes, cream, spinach, garlic, some spices) in the same skillet. But it was still pretty quick, maybe 35 minutes total. And it was delicious! Definitely a keeper.
The Verdict
All three recipes were winners! They were all relatively quick, easy to follow, and used ingredients I could easily find. The family loved them, which is the most important thing. I’m definitely adding these to my regular dinner rotation. Mission accomplished!
