Today I am gonna share with you guys how I made a quick and easy brunch for my family. It took me just about 30 minutes to get everything done. Sounds cool, right? Let’s dive in!
First, I went through my fridge and pantry to see what ingredients I had on hand. I found some eggs, bread, avocados, some fruits, and a few other bits and pieces. I also found some potatoes and decided to make a potato casserole.
I started by washing and chopping the potatoes into small cubes. Then, I tossed them in a bowl with some olive oil, salt, pepper, and a bit of paprika for that extra kick. While the potatoes were roasting in the oven, I moved on to the other stuff.
Next, I made some avocado toast. I toasted the bread slices until they were golden brown. While the bread was toasting, I mashed up the avocados with a fork, added a pinch of salt, some lemon juice, and a dash of red pepper flakes. I love that spicy touch! Once the toast was ready, I spread the avocado mixture generously over each slice.
Now, onto the eggs! I decided to make scrambled eggs because they’re quick and everyone loves them. I cracked the eggs into a bowl, whisked them with a little milk, salt, and pepper. Then, I cooked them in a pan with a bit of butter, stirring until they were just set but still nice and fluffy.
- Chopped potatoes
- Toasted bread slices
- Mashed avocados
- Scrambled eggs
While the eggs were cooking, I sliced up some fresh fruits I had. I arranged the fruit slices on a plate to add a bit of color and freshness to the brunch spread. Finally, I brewed a pot of coffee. Because what’s brunch without some good coffee?
By the time the potatoes were roasted to perfection, everything else was ready. I pulled the potatoes out of the oven, dished out the scrambled eggs, and arranged the avocado toast and fruit platter on the table. I checked the time – it took me just about 30 minutes. Perfect!
My family loved it! We enjoyed a delicious and relaxed brunch without me spending hours in the kitchen. So, if you’re looking for a quick and easy brunch idea, this is the way to go. Simple ingredients, minimal effort, and maximum flavor!
