Cherry Yum Yum

First up, I went for the “Cherry Yum Yum.” Sounded delicious, right? I grabbed some cream cheese ’cause it’s basically cheesecake, a can of cherry pie filling, some Cool Whip, and a graham cracker crust that I just picked up from the store. No time for homemade crust today!

I softened the cream cheese first – gotta make sure it’s all smooth and easy to mix. Then, I beat it with a mixer until it was fluffy. I folded in the Cool Whip gently. You don’t wanna knock all the air out of it.

Next, I spread this creamy mixture into the graham cracker crust. It was pretty easy to get it all even. Then, I spooned the cherry pie filling right on top. Oh boy, it already looked so good!

I popped it in the fridge for a couple of hours. You gotta let it set, you know? The waiting was the hardest part, but let me tell you, it was worth it. This Cherry Yum Yum was a hit! Super easy and tasted like a dream.

Fruit Salsa with Cinnamon Chips

Next on my list was the “Fruit Salsa with Cinnamon Chips.” I was intrigued. Salsa, but with fruit? I had to try it.

For the salsa, I chopped up a bunch of fruits – strawberries, kiwi, apple, and some raspberries. I made sure the pieces were small, like regular salsa. Then I tossed them all together in a bowl. I squeezed a bit of lemon juice over it, just to keep the apples from browning and to add a little zing.

Now, for the cinnamon chips, I took some flour tortillas and cut them into triangles. I melted some butter, brushed it on the tortilla pieces, and then sprinkled them with cinnamon and sugar. I baked these in the oven until they were crispy. It didn’t take long, maybe about 10 minutes.

The result? Amazing! The fruit salsa was so refreshing, and the cinnamon chips were the perfect crunchy, sweet companion. It was a fun, different way to enjoy fruit.

So, there you have it. Two easy peasy fruit recipes that I tried today. Both were simple, quick, and most importantly, delicious! I will definitely be making these again. Give them a try, I bet you will love them too!
