Okay, so I’ve been trying to get into this whole keto thing, and let me tell you, finding recipes that are actually quick and easy has been a struggle. My Keto Cooking Experiment

First, I raided my fridge. I already had some staples: eggs, bacon, cheese, and some sad-looking spinach. I also had a pack of ground beef that I’d been meaning to use. I have tried to find some recipes, and then I found a few that looked promising, but a lot of them called for ingredients I didn’t have or steps that seemed way too complicated.

Then, I stumbled upon this “keto mug cake” recipe. Sounded weird, but I was desperate. It basically involved mixing almond flour, an egg, some sweetener, and cocoa powder in a mug and microwaving it. The whole process took about 5 minutes, start to finish.

  • I dumped in the ingredients (didn’t even measure, just eyeballed it).
  • I stirred it all up.
  • I nuked it for like a minute and a half.

And… it wasn’t half bad! It was definitely a bit dry, but it satisfied my sweet craving. I’ve made it a few times since, and I’ve tweaked it a bit – adding a little butter or cream cheese to make it moister.

Next, I decided to tackle dinner,I had my ground beef.

  • Added some chopped onion and garlic (because everything’s better with garlic).
  • Seasoned it with salt, pepper, and some paprika.
  • Threw in some shredded cheese and let it melt.

I served it with a side of that sad spinach, which I just wilted in the same pan with a little butter. Honestly, the whole thing took maybe 20 minutes. And it was GOOD. Like, seriously good. It tasted like a cheeseburger without the bun, which is exactly what I was going for.

Since then, I’ve experimented a little more, making simple lettuce wraps with chicken and avocado, and those single-serving-size frittatas are a gift. I even have discovered that if I cook a big batch of bacon on the weekend, I can throw it into almost anything during the week for a quick keto boost.

The biggest lesson I’ve learned is that keto cooking doesn’t have to be complicated. It’s all about finding simple recipes and using ingredients you already have. And honestly, sometimes the simplest meals are the best.
