First, I brainstormed some basic ideas. I needed things that were fast, didn’t require a ton of ingredients, and wouldn’t make me feel sluggish in the afternoon. I’m no chef, so it had to be simple!
My Go-To Lunch Ideas
- Salads: I know, I know, salads can be boring. But I started getting creative! I bought a big container of mixed greens, then each week I’d pick up different toppings. One week it might be chickpeas, cucumbers, and feta cheese. Another week it could be grilled chicken (leftovers are great for this!), bell peppers, and a light vinaigrette. The key is to switch it up so you don’t get bored.
- Wraps: These are super easy. I grab some whole-wheat tortillas and then fill them with whatever I have on hand. Hummus and veggies, turkey and cheese, even leftover chicken salad works great. They’re portable and don’t require any reheating.
- Leftovers: Seriously, this is a lifesaver. Whenever I cook dinner, I make extra. Then I just pack it up for lunch the next day. It saves time and money, and I know I’m getting a good meal. Things like chili, soup, or even roasted vegetables work perfectly.
- Snack boxes pre-preparing little snack boxes with things like cut veggies, dip, fruits, cheese, and hard boiled eggs.
I started by prepping some ingredients on Sunday. I’d chop up veggies, cook some chicken, and make sure I had all my containers ready. This made it super easy to throw things together in the morning before work.
