Okay, so tonight, I was really craving something light and easy for dinner. I didn’t want to spend hours in the kitchen, and I definitely didn’t want anything heavy. So, I started by rummaging through my fridge to see what I had on hand.

I found some leftover grilled chicken, a bunch of cherry tomatoes, half an avocado, and some spinach. It was like the universe was telling me to make a salad! I grabbed a big bowl and started layering the spinach at the bottom.
My Super Simple Salad Process
- First, I washed the spinach.
- I sliced the cherry tomatoes in half – so much easier than dealing with big ones.
- Then I diced the avocado. I love how creamy it makes the salad.
- I shredded some of the grilled chicken, to add in that protein.
- I tossed everything together.
For the dressing, I didn’t want anything complicated. I simply squeezed some fresh lemon juice over the top, drizzled a little bit of olive oil, and sprinkled some salt and pepper. Done! Seriously, it took me maybe 10 minutes total, from start to finish.
It was exactly what I wanted – light, refreshing, and super flavorful. Plus, I felt good about eating something healthy. Sometimes, the simplest meals are really the best! I’ll be making that again for sure, It really worked.
