Today, I felt like making some dim sum, specifically those deep-fried dumplings. You know, the ones with the crispy, chewy skin and that juicy, savory filling. Yeah, those ones!
First, I gathered all my ingredients. I am not gonna lie, it looked like a lot, but I know it will be worth it. I’ve got my ground pork, some veggies, a bunch of seasonings, and of course, the glutinous rice flour for that signature chewy wrapper. The filling is pretty simple – just some ground pork and my favorite veggies, all mixed up with some soy sauce, ginger, and garlic. Nothing too fancy, just good old home-style cooking. I saw online some people simmer their pork, but I prefer to just mix it.
Making the dough was the fun part.
- I mixed the glutinous rice flour with a bit of water and a pinch of sugar. I added sugar as I saw in a recipe that it helps with moisture and slows gluten development, whatever that means.
- Then I kneaded it until it was nice and smooth. It felt like playing with playdough, but you know, the edible kind. I made sure to make the dough not too dry, but also not too sticky.
Next, I rolled out the dough and cut it into small circles. I grabbed a spoonful of the filling and placed it right in the center of each circle. Then, I folded the dough over and pinched the edges to seal them shut. They looked like cute little half-moons. They looked pretty good, if I do say so myself. They are not perfect, but I don’t care, they will taste just as good!
Time to fry these babies up!
I heated up some oil in a pan and carefully placed the dumplings in. I made sure not to overcrowd the pan. I fried them until they were golden brown and crispy. It smelled so good, I could hardly wait to eat them.
Once they were done, I took them out and let them cool for a bit. And then, the moment of truth – I took a bite. Oh boy, they were delicious! The skin was perfectly crispy and chewy, and the filling was so flavorful. I am really proud of myself!
