Getting Started

First thing I did was hit up the grocery store. Man, it’s like a whole different world in the gluten-free aisle! I felt so lost. I grabbed a bunch of stuff that said “gluten-free” on the label – bread, pasta, even some cookies (because, balance, right?).

The First Few Days

The first couple of days were…interesting. I tried making toast with the gluten-free bread. It was, uh, different. Kind of crumbly, and the taste was definitely not what I was used to. I persevered, though! I slathered on some avocado and it was manageable.

  • Breakfast: Gluten-free toast with avocado. Not bad, but not great.
  • Lunch: Salad with grilled chicken. Easy enough, naturally gluten-free!
  • Dinner: I attempted gluten-free pasta with tomato sauce. The pasta was… gummy. Let’s just say I didn’t finish my plate.

Experimenting with Recipes

After the pasta disaster, I decided I needed to get better at this. I started looking up gluten-free recipes online. There are SO many! I found some that looked promising – things like zucchini noodles (“zoodles,” apparently), cauliflower pizza crust, and even gluten-free muffins.

I tried making the zoodles. It was actually pretty fun, using a spiralizer to turn zucchini into noodle shapes. I sautéed them with some garlic and shrimp, and it was surprisingly good! A definite win.

Feeling the Effects (or Not)

Honestly, after a week or so, I didn’t notice a HUGE difference. Maybe a little less bloated? It’s hard to say. I did feel good about eating more vegetables, though, since a lot of the gluten-free recipes focused on whole foods.

The gluten-free cookies, on the other hand? Those were a mistake. They tasted like cardboard. I learned my lesson: just because it’s gluten-free doesn’t mean it’s good for you (or tasty!).

The Verdict

So, my “healthy gluten-free” journey was a mixed bag. I found some good recipes, some bad ones, and I learned that gluten-free isn’t automatically healthy. It’s more about making conscious choices and focusing on whole, unprocessed foods.

Will I stick with it completely? Probably not. But I’ll definitely keep some of the recipes I liked and try to be more mindful of what I’m eating.

It is all about learning and keeping going.
