Today, I wanted to try something new in the kitchen, something that sounded absolutely delicious: a chocolate potato cake. And not just any chocolate cake, but a gluten-free one! I have been cutting down on gluten lately, and I was craving for some sweets.
First, I gathered all the ingredients. I made sure to get good quality cocoa powder, because, let’s be honest, that’s the heart of any chocolate cake. Then, of course, there were the potatoes. Now, I know what you’re thinking – potatoes in a cake? But trust me on this, it works like magic.
- Mashed some boiled potatoes until they were nice and smooth. No lumps allowed!
- In a big bowl, I mixed the cocoa powder with some sugar, a pinch of salt.
- Then, the fun part – I dumped in the mashed potatoes and mixed everything together. It looked a bit weird at this point, not gonna lie.
- I also added some eggs, a bit of oil, and a splash of vanilla extract.
- Because it’s gluten-free, I used a mix of almond flour and a bit of coconut flour. Gave it a good whisk until it was all combined into a lovely, chocolatey batter.
I greased up a cake tin and poured the batter in, popped it into the oven, and waited. The smell that started to fill my kitchen was amazing. It was like a chocolate dream.
The Result
After about 40 minutes, I took the cake out. It looked fantastic – a deep, rich chocolate color. I let it cool for a while, then flipped it onto a plate. I decided to keep it simple and just dusted the top with some powdered sugar.
Cutting into the cake, it was so moist and fudgy. And the taste? Oh boy, it was heavenly! You couldn’t even tell there were potatoes in there. They just added this amazing texture and moistness. The cake was rich, chocolatey, and not overly sweet. And the best part, it was entirely gluten-free! My family loved it too! Definitely making this again, maybe even trying it with some different flavors next time. Who knows, maybe a chocolate potato and beetroot cake is in my future?
