Okay, so I’ve been trying to cut out gluten for a while now, mostly because I just feel better when I do. But breakfast, man, breakfast was tough. I mean, what’s breakfast without toast, pancakes, or cereal, right? I was really struggling to find stuff that I actually wanted to eat in the morning that didn’t involve gluten.
I started looking around for ideas, and honestly, it was a bit of a pain at first. Lots of recipes out there, but most of them were either super complicated or just didn’t sound that appealing. I don’t want to spend an hour cooking before I even start my day, you know? And I’m not into those weird, fancy ingredients that you can only find at some specialty store.
Tried Some Things Out
So, I started experimenting. First thing I tried was just having eggs every day. Scrambled, fried, poached… you name it. Eggs are great, I love them, but even I got bored of that after a while. Plus, sometimes you just want something a little more… substantial, you know?
Then I tried those gluten-free pancake mixes. Some of them are okay, I guess, but they’re never quite the same as the real deal. They tend to be kinda dense and just… not fluffy. And they’re expensive! It felt like I was paying double just to avoid gluten.
Smoothies became a go-to for a while. I started throwing all kinds of stuff in the blender – fruit, spinach, yogurt, protein powder. It was quick, easy, and filling. But sometimes, especially when it’s cold out, I just wanted something warm and comforting.
Figuring It Out
Finally, I started getting a bit more creative. I remembered that I actually really like oatmeal, and that’s naturally gluten-free as long as you get the right kind. So I started playing around with oatmeal – adding different fruits, nuts, seeds, a little bit of maple syrup. It was actually really good! And it kept me full for hours.
Another thing I discovered was that you can make pretty decent breakfast burritos with corn tortillas. I started filling them with scrambled eggs, black beans, salsa, a little bit of cheese, avocado. So tasty! It’s not exactly the same as a flour tortilla, but it definitely satisfies that burrito craving.
I also started getting into sweet potato hash. I started chopping up some sweet potatoes, onions, and peppers, frying them up in a pan with some spices. I put a fried egg on top, and bam! A really delicious and filling breakfast. It takes a little bit longer to make, but it’s totally worth it.

- Sweet Potato Hash: With a fried egg on top.
So, yeah, it took some trial and error, but I finally found some gluten-free breakfast options that I actually enjoy. It’s not as hard as I thought it would be, once I got past the initial frustration and figured out what worked for me. If you’re trying to go gluten-free, don’t give up on breakfast! There are good things out there, you just gotta find them.
