Okay, so, I’ve been messing around in the kitchen again, and this time I wanted to make some biscuits. But not just any biscuits, I wanted them to be gluten-free and dairy-free. I had tried a recipe before that was good, but it was a bit of a hassle with lots of ingredients and steps. I really wanted something simple and easy to work with.
I started searching around for ideas, looked at some products that were already out there, and got inspired to try a new approach. I went to the store, picked up all the stuff I needed, and made sure it was all gluten-free and dairy-free.
First, I grabbed a big bowl and tossed in some gluten-free flour blend. I made sure to use a good quality one, as I have found that it really makes a difference. Then, I added in some baking powder, baking soda, and a pinch of salt. I whisked all that together until it was nicely combined.
Next, I needed some fat to make the biscuits flaky. I used a dairy-free butter alternative, and I cut it into the dry ingredients using a pastry blender. You can also use your fingers for this. But the important thing is to work quickly so the butter doesn’t get too warm. I kept going until the mixture looked like coarse crumbs.

- Dairy-free milk
Then, I slowly poured in some dairy-free milk while stirring everything together. I just added enough until the dough came together, but not sticky. I’ve found that different gluten-free flour brands absorb liquid differently, so you might need to adjust the amount of milk a little.
Once the dough was ready, I turned it out onto a lightly floured surface and gently patted it down to about half an inch thick. Then, I used a biscuit cutter to cut out the biscuits and placed them on a baking sheet lined with parchment paper.
I popped them into a preheated oven at 450 degrees Fahrenheit and baked them for about 12-15 minutes, or until they were golden brown. And let me tell you, the smell in my kitchen was amazing!
When they were done, I took them out of the oven and let them cool for a bit. And there you have it, gluten and dairy-free biscuits that are super easy to make and taste delicious!
Honestly, these biscuits turned out great! They were fluffy, tender, and had a nice buttery flavor even without real butter. They were perfect with some jam, or even just on their own. I’m definitely going to be making these again!

I’ll be experimenting some more with this recipe, maybe adding some herbs or other flavors next time. I love how this recipe is so simple and flexible. I mean, you can change it easily to create your own favorite biscuit.
