Now, the recipe part. My granddaughter, she’s got all these fancy recipes on her phone. Says you gotta use a “paddle attachment” on the mixer. Back in my day, we mixed everything with a good ol’ wooden spoon and a strong arm. But fine, we’ll use her fancy machine. She showed me one recipe with chocolate and nuts… a “German Chocolate Cake” she called it. Sounded rich. But we gotta make it without the gluten and the sugar, so that’s a whole different ball game.
- First, you mix up your flours. Like I said, almond, coconut, rice… whatever you got.
- Then you add in your sweetener, eggs, some oil… I still like to use a little bit of butter, even if she says it’s not healthy. Butter makes everything taste better, that’s just a fact.
- Then you add your flavorin’s. Vanilla, maybe some cocoa powder for a chocolate cake. And don’t forget the salt! A little pinch of salt makes everything sweeter, you know. My mama taught me that.
Mix it all up real good, till it’s smooth and creamy. Then pour it in a pan and bake it till it’s done. How do you know when it’s done? You stick a toothpick in it, and if it comes out clean, it’s ready. That’s how we always did it, and it always worked. No fancy timers needed.

Now, let’s talk about the difference between “gluten-free” and “sugar-free.” Gluten-free means no wheat or grains like that. Sugar-free means no sugar, like duh! But my girl, she explained it more fancy-like. See, gluten-free is about one thing, sugar-free is about another. You can have a gluten-free cake with sugar, or a sugar-free cake with gluten… or you can try to be all fancy and make one that’s both. That’s what we’re doin’ today.
And about that sugar-free cake versus regular cake? Well, the regular cake, it’s got sugar. Plain and simple. The sugar-free one, it’s got them sweeteners instead. They say it tastes the same, but I don’t know about that. Nothin’ tastes quite like real sugar, in my opinion.

But if it makes my granddaughter happy and healthy, then it’s worth the trouble. Even if it means using flours I can’t pronounce and sweeteners that sound like they belong in a science lab. At the end of the day, a cake is a cake, and it’s meant to be enjoyed. And that’s all that matters, right?
And one more thing I need to say is, sometimes simple things are just the best. If you don’t have some kind of disease, maybe just don’t make these complicated food for nothing.
