Okay, so I’ve been trying to perfect my gluten-free tortilla game for a while now, and I think I’ve finally cracked the code. I was sick of those store-bought ones that fall apart the second you look at them, you know?

First, I got my hands on some gluten-free bread flour. It’s a little different to work with than regular flour, but it’s totally worth it. I mixed it up with a few other things – nothing fancy, just your basic stuff. And, let me tell you, this dough was a dream to work with. Seriously, it was so easy to roll out, not like some of those other gluten-free doughs that stick to everything and are a real pain.

The real magic, I think, comes from adding some fat to these babies. I tried both melted butter and olive oil, and honestly, they were both awesome. It just gave them that extra richness and flavor that was missing before. But you know what? I couldn’t resist messing around a little more.

  • I started sprinkling in some seasonings before I cooked them. Just a bit of garlic powder here, some onion powder there, and holy moly, the flavor went to a whole new level. And, for those days when I was feeling a little spicy, I’d throw in a pinch of cayenne pepper. It was the perfect kick!
  • Got the dough rolled out. Make some balls first then pressed them flat and round. Used a little extra flour so they wouldn’t stick. I tossed the rolled-out tortillas into a hot pan. They don’t take very long at all, maybe a minute or two on each side. You’ll see them start to bubble up a bit, and that’s when you know they’re getting there.

Finally, They Worked

After a few attempts, I managed to get them just right. They were soft, they were chewy, and they didn’t fall apart when I loaded them up with all my favorite fillings. I used one right away to make a wrap with some leftover chicken and veggies, and it was seriously the best wrap I’d had in ages. These tortillas are way better than anything you can buy at the store, hands down. They’re perfect for tacos, burritos, quesadillas, or just eating plain. I’m so excited to finally have a gluten-free tortilla recipe that I love!
