Okay, so, I had this party coming up, right? And I’m thinking, “I gotta make something that looks fancy but doesn’t take forever.” You know, I wanted to actually enjoy my own party instead of being stuck in the kitchen all day. So, I decided to go with cold appetizers, ’cause you can make ’em ahead of time. That’s how I started it.

First, I thought about what people like. Everyone loves a good dip, I figured. And I remembered seeing something about a spinach dip somewhere online. I dug around a little, looked at some recipes, and I tried to combine them to find the simplest one. Then I began to mix it.

I grabbed some frozen spinach, thawed it, and squeezed out all the water. That’s important, or your dip will be all watery, not cool. Then I mixed it with some mayo, sour cream, and some of that dry onion soup mix. It was really simple. I also added a little garlic powder and some pepper. I chilled it in the fridge for a few hours. And boom, done! I served it with some toasted baguette slices, and it was a hit. People were going back for seconds and thirds, no joke. I was like, “Yeah, I made that.” It felt pretty good, not gonna lie.

  • Thaw frozen spinach and squeeze out water
