Okay, so I’ve been seeing these “eclair cakes” all over my Pinterest, and they look super yummy and easy. Plus, I needed a gluten-free dessert for my friend’s potluck, so I thought, “Why not give this a shot?”
Getting Started
First things first, I gathered all my ingredients. This is the kinda recipe where you wanna have everything ready to go, because it moves pretty fast. I made sure I had:
- Gluten-free graham crackers (I used a brand I found at my local health food store)
- Instant vanilla pudding mix (make sure it’s gluten-free, some aren’t!)
- Milk (I used regular, but you could probably use almond or soy if you need it dairy-free)
- Cool Whip (or any whipped topping, again, check for gluten if needed)
- Chocolate frosting (the canned stuff is easiest)
Layering it Up
So, I grabbed a 9×13 inch baking dish – no need to grease it or anything. Then, I started by laying down a layer of the graham crackers on the bottom. I had to break some in half to make them fit, which was no big deal.
Next, I whisked together the pudding mix and milk according to the package directions. Once it was nice and thick, I folded in the Cool Whip. This makes it all fluffy and delicious.
Then, I poured about half of the pudding mixture over the graham crackers and spread it evenly. I added another layer of graham crackers, then the rest of the pudding, and finished it off with one final layer of crackers.
The Final Touch
I popped the whole thing in the fridge for a few hours, just to let everything set up. This is important, don’t skip this step! The crackers need time to soften up.
The last part is easy: I put my frosting in the microwave for like 20 seconds. I spread the melted chocolate frosting over the top layer of crackers and put it back in the fridge.
